This project is an initial exploration of ‘lab-to-table’ as a concept for designing edible alternatives to animal products.
Starting with limited resources – like just three bags of carrots – we focus on making the most of what’s available. By incorporating food waste and emphasizing regional and seasonal ingredients, we experiment with processing vegetables and plants.
